Ingredients
- 1ย poundย breakfast sausage
- 1ย loafย Cuban bread, French loaf, or other โboat-shapedโ bread
- 2ย cupsย shredded Cheddarย Jack cheese or Mexican blend cheese, divided
- 6ย largeย eggs
- 1/3ย cupย heavy cream
- 1ย teaspoonย kosher salt
- 1/2ย teaspoonย freshly ground blackย pepper
- 1/3ย cupย finely choppedย red bell pepper
- 1/4ย cupย thinly slicedย green onion

Preheat the oven to 325ยฐF (165ยฐC). Line a rimmed baking sheet with parchment.
3.Using a serrated knife, trim off the top layer of bread to expose the inside. Create a well for the fillings by removing most of the bread on the inside. Place 3/4 cup of cheese along the bottom of the bread; then, place the bread on the prepared baking sheet.4. Whisk eggs, cream, salt, and pepper together in a large bowl until well blended. Stir in the cooked sausage, bell pepper, green onions, and remaining cheese; then pour the mixture into the prepared bread loaf.5. Bake in the preheated oven until eggs are set, 35 to 40 minutes. Let stand 5 minutes before slicing and serving.
